Trying something new=YUMMY



Please excuse my poor lighting and cell phone pic.
 So when I came across this recipe for Thai Peanut Noodles with Chicken and Veggies I was so excited to try it! But had been holding off on giving it a go for a while because I was fearful of the hubs’ reaction to it. When we got home from work on Sunday (yes it is that time of the year that work is 7 days/week) I was in the mood for something different and not real hard. I threw caution to the wind and thought if he doesn’t like it he can eat a peanut butter sandwich. I had everything in my house except fresh ginger, I just used some ground, don’t tell the food police. Oh and air head me thought I had some chicken breast in the freezer but I didn’t so I just grilled some pork chops sliced them up and threw it in.


If you are in the mood for a bit of fake thai/ asian flare this fits the bill perfectly. I say fake because I will not say that this is authentic or even close to authentic just good and loaded with lots of veggies.

Oh the verdict from the hubs was…I would eat this again! For him that is a pretty good reaction.

Two and a half…. Thirty Months!



Thirty Months I like the sound of that much better than two and a half. Today’s the day she is thirty months old. Amazing how it seriously seems like yesterday that we were bringing her home from the hospital. Charlot is the biggest blessing to her daddy and my life we can’t imagine it without her.


Some of our thirty month accomplishments include...nearly potty trained, night time is a work in progress, speaking in full sentences, dancing, singing, saying parts of our A,B,C's, counting, and more I am sure.

Some of her favorite things...pasta with sauce to dip into, tractors, driving tractors, Mickey Mouse, being outside, picking flowers, talking on the phone, oh and walking pigs.

But here is a story that I don’t have a picture for but couldn’t resist sharing. On July 5th my friend and co-worker gave birth to a precious baby boy he joins two older sisters one is 7 the one is 19 months. I was showing Charlot some pictures of the younger sister holding the baby telling her that Kenzi’s mommy and daddy had given her a new baby brother and wasn’t he so cute. Charlot looks at me as serious as the world and says “I don’t need one of those.” Talk about picking yourself up off the floor in laughter. I just smiled and said ok. She is a real pistol.

Next Friday she is having tubes put in her ears, nine ear infections later I guess it is time. I am a nervous wreck seriously I start to cry just thinking about it but I know it is for the best.
